Moulin de Cambelong had humble beginnings as a water mill in the 13th century, located along the Dourdou River. In fact, it's among the last remaining mills in the area. The mill was renovated and transformed by renowned chef Hervé Busset. It was later acquired by its current owners, chefs Émilie and Thomas Roussey. The duo tries to preserve the mill's legacy as well as uphold the heritage of the region. For this reason, they've retained most of the original features from the property's past and ensured that it's properly preserved.
Design and Architecture
The hotel's stone facade will transport you back in time. It features the typical architecture of a water mill from the 18th century. While the guest rooms and other spaces inside the hotel have been renovated and modernized, they still feature characterful details such as exposed wooden beams and stone walls, glittering chandeliers, and more. You can also find 16th-century furniture adding to the old-world charm.

Gourmet Restaurant
Proud winner of a Michelin Star in 2024, the main restaurant at the hotel offers a unique dining experience with creative cuisine. The menu changes frequently, so expect to be pleasantly surprised every other day at mealtime. It's also curated per the season so that only fresh produce is used. You'll feel at home with the relaxing ambiance of the restaurant, and servers who are keen on sharing the story behind each recipe with patrons. The terrace and lounge area offer an even more laid-back vibe. The establishment also tries to pursue sustainable gastronomy by sourcing organic products, minimizing carbon footprint, and promoting proper waste management. It's no wonder that it has bagged three Écotable certifications since 2020.

An extension of the main restaurant, Bistrot Le Héron is ideal for simple meals with an Italian touch. Just like the main restaurant, this establishment also utilizes fresh local produce for the dishes. It has both indoor and outdoor seating arrangements, in the lounge and on the terrace , respectively.

Due to its lush green surroundings and proximity to the Dourdou River, Moulin de Cambelong offers plenty of exciting outdoor activities, including hiking, canoeing, kayaking, and fishing. Electric bikes for different kinds of terrains can be hired nearby from O'Bike, or you can simply follow the scenic walking paths and visit the viewpoints. Culture enthusiasts will have a lot to explore as well. Walk to the historic Pont sur le Dourdou or venture further into the village of Conques to check out St-Foy Abbey-church. You can also explore the local producers' market at Saint-Cyprien, which operates on Saturdays between November and March and on Fridays between April and October.
