Moulin de Cambelong

61 Lieu Dit Cambelong, 12320 Conques-en-Rouergue, France

Overview

Lovingly run by chefs Émilie and Thomas Roussey, Moulin de Cambelong is an exquisite establishment for historic stays and gastronomic adventures. It dates back to the 1200s and proudly boasts its period architecture and decor. Formerly a water mill, the property welcomes guests with uniquely decorated rooms, some of which have balconies or terraces for admiring the beautiful views. The lush green surroundings and access to gushing rivers offer a perfect setting for romantic retreats or relaxing getaways with the family. You can even bring your four-legged companion along for a wholesome experience. Last but not least, when it comes to food, it's no surprise that Moulin de Cambelong delivers, what with being run by two skilled chefs.

History

Moulin de Cambelong had humble beginnings as a water mill in the 13th century, located along the Dourdou River. In fact, it's among the last remaining mills in the area. The mill was renovated and transformed by renowned chef Hervé Busset. It was later acquired by its current owners, chefs Émilie and Thomas Roussey. The duo tries to preserve the mill's legacy as well as uphold the heritage of the region. For this reason, they've retained most of the original features from the property's past and ensured that it's properly preserved.

Design and Architecture

The hotel's stone facade will transport you back in time. It features the typical architecture of a water mill from the 18th century. While the guest rooms and other spaces inside the hotel have been renovated and modernized, they still feature characterful details such as exposed wooden beams and stone walls, glittering chandeliers, and more. You can also find 16th-century furniture adding to the old-world charm.
