Hostellerie le Castellas dates back to the 1600s and provides a boutique setting for guests and their beloved pets. It's located in an old village and boasts an old-world charm that sets it apart from usual chain hotels. Note: The hotel remains closed annually between October 31 and March 31.

History

Hostellerie le Castellas is housed in a group of 17th-century buildings that still flaunt period features. The site was discovered and lovingly restored by the Aparis family in 1989. They made sure that the medieval details remained while updating other aspects of the buildings and making them hospitable and comfortable for guests. After 25 years with the first generation of the Aparis, the property was passed on to the next. Today, Aurélie Aparis Perrier and her husband, David, run the hotel. It also became a part of the Territoria group, which further boosted its reputation. Aside from being an excellent hotel, the property is also a first-class restaurant offering award-winning service. It won the 2012 Award for Best in Kitchen, so you can expect a grand gastronomic experience here.

Design and Architecture

The hotel's architecture reflects different styles. It has an exterior boasting 17th-century architecture typical to the region, which includes the use of stones of Vers Pont du Gard and sloping tiled roofs. Each guest room is decorated uniquely, and you can choose from units featuring Art Deco, Baroque, Art Nouveau, or Art Contemporary styles depending on your preference. The stone-vaulted lounge rooms welcome guests to relax in style, while the zen garden provides peace and fresh air. You'll also find a lovely pool in an intimate setting, almost resembling a Roman Bath!

His brilliant inventive cuisine has earned the restaurant not one but two Michelin stars in 2006 and 2009, respectively. Nutile uses local produce for his creations and offers a blend of tradition and innovation. Make sure to try his signature dishes, including terrine de foie gras maison and le duo d’agneau. The restaurant focuses on seasonal menus with light organic dishes and sources products from the on-site vegetable garden. Sommelier Jean-Luc Sauron will help you pair the perfect wine with your meal. You can enjoy breakfast, lunch, or dinner inside the stone-vaulted hall or on the open terrace.

Note: The restaurant remains closed every Tuesday and Wednesday between April 1 and June 30, and September 1 and October 31.
