Auberge du Cheval Blanc has been providing solace to travelers since its inception in 1740. In its early years, the property used to be a post-house sheltering weary travelers. Renowned French chef Ferdinand Mischler operated it as a distinguished culinary institution. When Alsatian chef Pascal Bastian and his wife, Carole, acquired the property in 2008 , they carried forward Mischler’s legacy. Auberge du Cheval Blanc received its first Michelin star in 2009 with Bastian’s help.
Along with their delicious food, the Bastians have been providing their guests with cozy lodgings and luxurious spa treatments. They’ve transformed the hotel into a modern establishment with traditional Alsatian touches. In 2019, the property inaugurated a new wing adjacent to the main building, called Maison Alsacienne.
Design and Architecture
Auberge Du Cheval Blanc showcases 18th-century Alsatian architecture. The traditional half-timbered facade is complemented by the period features inside the hotel, including ornate mirrors. You’ll also find exposed beams in the rooms and suites, adding a rustic vibe. The decor inside the hotel is minimal, featuring subdued hues and light wood for a cozy ambiance.

The Dining Room at Auberge du Cheval Blanc offers a gastronomic experience like nowhere else. The ambiance itself will blow you over, with earthy tones, subtle lighting, coffered ceilings, and wooden accents. There’s even a fireplace to add to the cozy factor. The restaurant not only boasts a Michelin star but also 3 toques in the Gault & Millau guide. The head chef, Pascal Bastian is himself double Michelin-starred.
The restaurant serves Alsatian cuisine with a twist, sourcing fresh ingredients from a list of trusted suppliers. You can pair your meals with the best wines from Alsace and other regions, using the help and advice of sommelier, Jonathan Pral.
Opening hours: 12 pm - 1:30 pm, 7 pm - 9 pm (closed on Mondays, Tuesdays, and Wednesday noons); (closed from 31st January to 18th February and from 22nd August to 8th September)

Auberge du Cheval Blanc’s idyllic location makes it a great base for hiking adventures. The hotel staff can help you plan your trip for an additional charge. Other than that, the property offers bicycle rentals so you can explore the beautiful natural surroundings.
