Inspired and ready to make new waves in the hospitality industry, Chef Denis set about transforming the property into a hotel and restaurant. Today, it is a beloved sight in the commune of Verdun-Ciel and is well-known for the chef's signature pôchouse fish stew. It is also a popular venue for events, using its charming rural Burgundy architecture as the backdrop for celebrations and company gatherings.

History

When hotel owner Didier Denis decided to make his mark in the culinary scene, he wanted a location that best captured the beauty and essence of his home region. He then came across Hostellerie Bourguignonne, a Burgundian property with over 130 years of history. The property had sadly fallen into disrepair and needed some care. Didier Denis acquired it in 1996 and immediately set about restoring and transforming the place into the inn and restaurant of his dreams.
