The historic Hôtel Ithurria started off as an inn sheltering pilgrims on the St. Jacques de Compostella pilgrimage route in the 17th century. In 1962, Marie-Louise and Émile Ithurria bought the property and transformed it into a hotel-cum-restaurant. They named it after their surname. Their sons, Stéphane and Xavier, eventually stepped in to take care of the hotel, and their grandsons continued the tradition in 2018.
The family-run establishment has always placed a high value on warm hospitality and faultless service. Modern improvements have been made, yet the building's rustic character has been meticulously maintained. At the on-site restaurant, which has received a Michelin star, they have also mastered French cuisine.
Design and Architecture
With its Basque architecture and furniture from the 17th and 18th centuries, Hôtel Ithurria remains true to its past. The red and white facade stands out with its shuttered windows and sloping tiled roof. The guest rooms combine contemporary conveniences like flatscreen TVs with rustic elements like exposed wooden beams. You'll also find beautiful paintings by Basque artists.
The terracotta-tiled floors of the restaurant also hearken back to older times. Plus, the owners have preserved old utensils like copper pots and vintage tableware for a more authentic feel.

The Restaurant
Chef Martin Isabal, with assistance from his brother Louis, runs the on-site restaurant. The Michelin-starred establishment offers authentic Basque-Béarnais cuisine. The hotel's very own vegetable garden and chicken coop serve as the primary sources of fresh produce used in the meals. Stéphane Ithurria himself assists guests with wine pairings for a more personalized experience. Try entrées such as le pied de porc Rossini, dig into fish and meat specialties, and finish off with a sinful dessert.
Availability: Guests are welcome until 1:30 pm; tasting menu is served until 1 pm
The restaurant is closed on Tuesdays at lunchtime, Wednesdays, and Thursdays at lunchtime.
Ithurria Bistro
Head to the on-site bistro for a more laid-back atmosphere. It's run by Xavier Isabal and his team, who try to be creative with the cuisine for a unique experience. You can enjoy salads, platters, and desserts here along with affordable wines.
