While Domaine de Saint-Géry dates back to the 15th century, it came into prominence only after it was inherited by Patrick Duler in 1984. Patrick saw immense potential in the dilapidated building, as well as the wasteland surrounding it. He decided to stay there and restore the property as it certainly deserved some love and care. Patrick started by opening his own restaurant there, called La Petite Auberge. Simultaneously, he achieved the Professional Agricultural Certificate and became a farmer to feel closer to the land and put it to good use.
Patrick also wanted to work from scratch to provide his guests with food that came from his own efforts. That's how he created his vegetable garden, started raising animals like pigs and ducks, and planted trees in the almost unyielding land. Patrick's efforts bore fruit with time, and he also got assistance from famous personalities, such as the CEO of Cartier International, Alain Dominique Perrin. Soon, La Petite Auberge became a trustworthy venue for enjoying delectable meals.
The second stage of the property's development started when Patrick met Pascale in 1991. The latter shared his vision and dreams, and together they dove deep into sustainable practices such as organic farming and avoiding monoculture to develop the land. They made sure to stick to their motto, "from the earth to the plate", when it came to gastronomy. Even the water and heat for the property came from sustainable resources. Aside from gastronomy, the duo also focused on the buildings inherited by Patrick. They painstakingly renovated, restored, and refurbished them, while making sure to retain their authenticity.
In 1996, Patrick joined a training course in gastronomy to further hone his skills. He even got the chance to work with renowned chefs such as Alain Ducasse. A processing laboratory was built on the property to ensure a flawless way of creating new recipes without resorting to the use of chemicals. With time, Patrick and Pascale also imparted their three children with the knowledge and skills they'd collected over the years. Now, the children contribute to different aspects of the hotel in their own unique ways with a shared goal of taking the hotel and restaurant to new heights.
Design and Architecture
The property makes guests fall in love with its 15th-century architecture, brilliantly restored by the Dulers. The wooden tiles on the roof, exposed stone walls, antique furniture, exposed beams, and old family souvenirs create a lovely homelike vibe while highlighting the property's rich heritage. Most of the credit for the hotel's decor goes to Pascale, an ardent lover of art and history.

Patrick's certified organic farm provides most of the resources used to prepare the delectable meals at the restaurant, Le Domaine de Saint-Géry. He also makes sure not to use chemicals and keep the food as natural as possible to preserve its highest form of taste and nutrition. The excellent products produced on his farm through sustainable agriculture have been recognized and rewarded multiple times, such as in 2001 at the Concours Général Agricole. The cellar-aged Gascon pork ham, in particular, is a must-try, being the proud winner of the best ham in the world title. Even the herbs and veggies come from the proeprty's vegetable garden.
The menu keeps changing every evening and is dependent on a lot of changing factors, including the season. The wine list is also exceptional, with most of them being natural wines. The wine collection is optimally preserved in the property's old stone cellars. Another must-try is the Grand Petit-Déjeuner or the big breakfast offered at the hotel. This includes homemade bread, coffee or tea with organic milk, naturally produced cured meat, organic fruits, and more, for just 57 EUR (61.83 USD) per person.
