44 Cote du Palais, Old Quebec, Quebec City (QC), Canada, 4H8
The story of Hotel Manoir Victoria begins in the early 1830s as the Albion Hotel on Côte du Palais, owned by Thomas Payne and known as one of the finest hotels in Québec City. Over time, it evolved into the Stadacona before Benjamin Trudel acquired it in 1895, refurbishing and renaming it Hotel Victoria. Built without city approval, the structure drew strong opposition from local merchants and was eventually demolished despite legal efforts to preserve it.
In 1902, a fire destroyed the hotel, prompting Aurèle Resther to rebuild it. The new hotel, completed in 1904, continued to grow with the addition of three more floors in 1910. By the 1920s, it had become a well-known address for upper-class visitors, appreciated for its dining and attentive service. Expansion continued in 1929, when the hotel reached 250 rooms. Another fire in 1942 caused heavy damage and reduced its size.
With growing competition, the hotel closed in 1978. After nearly a decade of silence, it reopened in 1988 following extensive renovations, marking a new phase. New rooms, added facilities, and later upgrades, including Chez Boulay – Bistro Boréal and major renovations between 2012 and 2016, gradually shaped the hotel into what it is today, carrying forward a long and eventful past.
Tucked into the historic streets of Québec City, Hotel Manoir Victoria reflects a layered design shaped by time rather than a single architectural style. Its look can be best described as heritage-inspired with contemporary updates, evolving through rebuilds and renovations across decades. Details like copper roofing and a wrought iron canopy at the entrance add character, quietly echoing the city’s historic architecture while giving the façade a more refined, urban edge.
The interiors lean toward a clean, contemporary style, softened with warm materials and thoughtful details. In the main foyer, a muted ambiance is created by a linear eight-foot fireplace set within a large built-in bookcase, giving the space a quiet focal point. Overhead, pendant lighting adds just the right level of brightness. Rooms follow the same direction, designed with neutral tones, simple lines, and updated finishes. Some retain a slightly classic touch, but most reflect recent renovations with improved layouts and glass-enclosed bathrooms.
Opened in 2012, the restaurant is helmed by chefs Jean-Luc Boulay and Arnaud Marchand, and has steadily built a reputation for its creative take on Nordic-inspired cuisine. The menu draws from boreal ingredients and regional produce, bringing together Nordic terroir and French culinary techniques. Dishes change with the seasons, often featuring elements like elk, wild mushrooms, elderflowers, and Labrador tea. There’s a clear focus on ingredients sourced from Québec’s forests and northern landscapes, giving the food a distinct identity that feels rooted yet inventive.
