Before there was a Hostellerie Les Gorges De Pennafort, what stood in the area was a rural French farmhouse with Medieval stonework architecture. The humble farm estate would later be found by Philippe Da Silva , a renowned celebrity chef, and in 1991 converted into the fancy boutique hotel it is known as today. Together with his wife Martine Da Silva and business partner Chef Anthony Salliège, the trio would set about turning the area into a destination of its own. They would take advantage of the hotel's strategic location, in the middle of the commune of Callas and the scenic Gorges de Pennafort.

Aside from the amazing cuisine at the hotel's restaurant, they would also add wellness and sports facilities to attract a wider variety of clientele. Unfortunately, Philippe would pass away in 2023.
