Hostellerie de l’Abbaye de la Celle's proximity to the Royal Abbaye de la Celle, a 12th-century Benedictine abbey, adds to its historic vibe. So, it's necessary to know a bit about the latter. The abbey was built on the site of a destroyed monastery meant exclusively for nuns. It became so popular that at one point in time around 1267, it hosted about 100 nuns. In 1660, the abbey again faced closure due to the misconduct of some of the nuns. Later, it was acquired by a farmer during the French Revolution. The abbey was finally declared a historic monument in 1886. By then, it has hosted noble troubadours such as Elias de Barjols and Guy de Cavaillon.

The property itself dates back to 1938 when it was built into a hotel-cum-restaurant under the supervision of Sylvia Fournier. It impressed notable personalities such as Charles de Gaulle, former General and President of France, who stayed here multiple times. After Fournier's death, the property again fell into disuse for many years. It caught the attention of the Conseil Général of the Var, who became the new owner of the property and took it upon himself to restore it. Finally, in 1999 , renowned French chef Alain Ducasse acquired the hostellerie and started renovating it to reflect the signature sophistication showcased in all of his properties. It underwent major renovations in 2011 to transform into a boutique hotel, but Ducasse made sure to keep its historic charm intact.

Design and Architecture

The hotel features 18th-century architecture with solid old stone walls, a classic French facade, and intricate carvings on the walls. The guest rooms boast soft tones, vintage furniture, and chic modern decor that gives out a sophisticated vibe. The on-site garden is also a sight to behold with beautifully landscaped vegetation, including century-old cypress trees, and unique sculptures by Nathalie Decoster.

You can taste the true flavors of the region at Hostellerie de l’Abbaye de la Celle thanks to Chef Nicolas Pierantoni, who's a local determined to use locally sourced products to create his culinary masterpieces. The creative and seasonally changing menu incorporates items that fit the hotel's setting, including fresh fruits, vegetables, fish, and more. Chef Pierantoni follows an environmentally responsible approach and supports local farmers. He also sources ingredients from the vegetable garden on the property, which has aromatic herbs, courgettes, and tomatoes, among other things. The cherries and persimmons from the orchard are also used to make delicious sweet treats.

Meals can be savored in different locations depending on weather, availability, or simply your mood. The elegant dining room is ideal for a formal meal, the wrought-iron veranda is perfect for breakfast dates, and the terrace is best suited for those who love to admire the natural surroundings while enjoying a meal on a sunny day.

French cuisine is incomplete without a glass of great wine to go with it. Luckily, this hotel's wine list is approved by Gérard Margeon, Head Sommelier at Maison Ducasse Paris. You can taste vintages sourced from winegrowers in Provence.
