When hotel owner Didier Denis decided to make his mark in the culinary scene, he wanted a location that best captured the beauty and essence of his home region. He then came across Hostellerie Bourguignonne, a Burgundian property with over 130 years of history. The property had sadly fallen into disrepair and needed some care. Didier Denis acquired it in 1996 and immediately set about restoring and transforming the place into the inn and restaurant of his dreams.
Design and Architecture
The owner of Hostellerie Bourguignonne made it a point to preserve the property's 19th-century charm, taking advantage of the lovely Burgundian architecture that embodies the beauty of rural Bourgogne. The earthy colors and natural wear and tear of the exterior create an immersive ambiance. In contrast, the hotel's rooms are vivid and vibrant in color, providing a sense of opulence while surrounded by countryside.
